Roasted tomato pesto soup can be anything you want - soupy and runny or thick and creamy. It always tastes good because tomatoes and basil is such a classic combination. Dunk some cheesy bread in, and you'll feel like you are tasting pizza somewhere.
This side of the world, we have fresh, juicy, tomatoes coming in strong and I had to make the obligatory tomato soup to celebrate. We are adding a secret ingredient to this favorite (not so secret anymore since its in the recipe title 🙄) and taking this to the next level! Yes yes, its basil pesto.

So this version of tomato soup is a little different from the original. I'm adding an extra step or modifying a step to get more flavor from these tomatoes.
Roasted Tomato Soup With Pesto And Grilled Cheese Croutons
We start by roasting the tomatoes, carrots, onions and garlic. This really sweetens the tomatoes and makes this soup even more delicious. Then everything is blended together.
And finally we reheat it with some stock (if you like) to thin it out slightly, and finally stir in some balsamic vinegar for extra umami and pesto. Which is what makes this roasted tomato pesto soup so special.
Tomatoes and basil are obviously, legitimately married to each other in a very good way. And in this soup, the pesto adds a nice, herby touch. So you are thinking summer but it's actually perfect for winter. I love the freshness from the pesto, and the toasty, caramelized flavor of the tomatoes and veggies.

Normally, I like to let soups simmer away for at least 30 minutes (or even better, in a slow cooker all day!), so when I saw this recipe, I was leery of the quick cooking time.
After just one bite, I was amazed. The flavors were deep, rich, and absolutely fantastic!! If I hadn’t known better, I would think the soup cooked for hours!

Great question!! Fresh tomatoes are amazing, especially in the summer! It will take some tweaking, and a little bit longer cooking time, but here’s what I would do:
I really love the pesto drizzle on top of the soup. Even if you’re not a huge pesto fan, give it a try! The optional swirl of extra half and half is great too, but not necessary if you’re worried about adding any additional calories or points.

Crock Pot Pesto Tomato Soup
I don’t want to toot my own horn but the flavour and bisque-like texture of this soup is second to none and certainly far above soup that comes from a can. Plus, it’s so EASY!
The answer is triple the tomatoes…to triple the Tomato Soup Flavour! In most recipes, but especially ones as simple as this one, the quality of ingredients is of greatest importance.
This recipe contains fresh Roma Tomatoes grown right in our backyard, both fresh and oven roasted. In addition, adding a whole can of San Marzano tomatoes really coaxes out maximum tomato flavour in this soup.
Raw Basil Pesto 200g
I did a little flavour/texture experiment with this soup. First I tested half of the soup with just the four main ingredients; tomatoes, stock, onion, and garlic. Then I tested the other half using a thickening agent like pine nuts.
Both versions had a light creamy texture (I attribute this to the Vitamix #notsponsored) but the pine nut version was creamier and had such a nice nutty flavour.
If you don’t have pine nuts, toast up some raw cashews or sunflower seeds. All three will add a bit of sweetness and are a great way to make vegetable soups ultra creamy.

Vegans rejoice! You can easily substitute vegetable stock for the chicken stock and use nutritional yeast in place of the cheese in the basil pesto.
