Few things are as comforting and delicious as roasted potatoes. There's something about this dish that takes us to toasty afternoons in the comfort of our home, no matter when and where you're eating them.

There are plenty of ways to make roasted potatoes but it's rosemary roasted potatoes that make just about any dish feel familiar, even if it's the first time we've had it.

These ranch roasted potatoes are 4 Freestyle points per serving, which is 1/2 cup. A half cup doesn’t sound like much, but it’s a perfect size for a side dish.

My Cypriot Roast Potatoes

The points in this recipe come from the potatoes. I used 2 pounds of potatoes which gave me 6 half cup servings. I highly recommend weighing the potatoes. It’s the only way to know exactly how many potatoes you can use.

I added my potatoes to a mixing bowl, gave it 3 pumps of the cooking spray and added half of the seasoning.

I stirred the potatoes, gave it three more pumps of the olive oil spray, added the rest of the seasoning and stirred the potatoes again.

I spread the potatoes across a sheet pan and baked them at 400 degrees for 30 minutes. About half way through I pulled the potatoes out of the oven, mixed them up and added two more pumps of the olive oil spray.

Since the potatoes are 4 Freestyle points I paired them with a boneless, skinless chicken breast and a salad with low point dressing.

Even though I had potatoes, my entire dinner was only 5 Freestyle points. I love being able to eat what I want. I just need to plan ahead for when I want potatoes!
